Grilled Peaches with Vanilla Ice Cream

Grilling stone fruit (peaches, plums, nectarines, apricots) caramelizes the natural sugars and enhances the sweetness. Grilling also adds a slight char or smokiness that is absolutely delicious. Add some berries and ice cream and you've captured summer in a bowl!
Peaches are a good source of carotenes and flavonoids, like lycopene and lutein, which are also responsible for the red, orange, and yellow colors in fruits and vegetables! These phytochemicals are important antioxidants and beneficial for eye and heart health.
Makes 6 servings
Ingredients:
3 organic peaches or nectarines, cut in half, pit removed
1-2 tablespoons extra virgin olive oil
6 scoops vanilla ice cream
Preparation:
Heat a grill to medium-high heat. Brush the cut halves of each peach with olive oil, then lay them cut side down on the grill and close the lid. Cook for 3-4 minutes, until grill marks begin to appear. Flip the peaches and cook for another 3-4 minutes or until the peaches are warm and soft all the way though. Remove the peaches from the grill and serve each with a scoop of ice cream. Adding berries is optional.
